Three Brothers. It's the south Manchester takeaway that's gone viral for selling the region's hottest kebab.

But what's less well-known is that one of its founders started out selling kebabs from his own home - doing deliveries around the city from his kitchen in Longsight.

The doner kebab isn't usually something attempted successfully at home. But, as someone with decades of experience in the food industry, Miz Rahman had all he needed to make it work.

The side hustle - 'Miz's Kitchen' - started out in 2019. Miz had walked away from working as a chef for more family-friendly work as a cab driver. But, inspired by what he discovered on a trip to London, he found himself drawn back to hospitality.

"I've been a chef for 24 years and I always had ideas to make traditional dishes with a twist." The 41-year-old from Longsight told the MEN.

"I used to go to London and they used to do Naga donner there, and I thought I'd do my own take on it.

"I created a dish and I started off from home, it became popular and it just went wild. I was cooking it from my kitchen with the support of my wife.

"It got to the point where it got really busy and I was doing deliveries from there and my brother (Zia) would help me out with that.

"Lockdown came in place and I put things on pause for a bit. I started getting calls asking to bring it back and that's when I decided to look for a place."

The Burnage takeaway that followed took the popularity Miz had built up to new heights. Its name - Three Brothers - pays homage to the partnership between Miz and his siblings, Zia and Misbahur.

"I didn't realise we would become this big." Zia told the MEN.

"When we started off, we laughed at Miz suggesting it would get to this level. Within three months of opening it went mad."

Miz claims that it went 'mad' because of two things, their Naga Boss Box which they believe started a trend in the Manchester takeaway scene - and their Naga sauce which they say is the first and only of its kind in the city.

The Naga Boss Box - Three Brother's bestseller - includes a smashed double patty beef burger, seasoned chips lathered in nacho cheese, Naga wings and their famous Naga donner for £14.45.

"As soon as we introduced that, which was six months into the business, we were selling something like 150 boxes a day," Miz said.

"People were waiting up to an hour, the road was so busy because of the boxes. It got really popular and all the other establishments started copying it.

"After six months I saw loads of people trying to replicate it but they can never replicate our Naga donner or our wings."

Their Naga sauce is made from Naga Morich, which, in 2011, was recorded as the hottest chilli in the world by Guinness World Records, with 1,382,118 Scoville heat units.

The chilli pepper is grown in Asia - and there's a family secret behind their use at Three Brothers too.

“It’s unique, nobody does this in Manchester," Miz says.

“Naga is one of the hottest chillies in the world after the Carolina Reaper, it originates in Bangladesh and my mum grows Naga chillies from home, and they supply me with that. So I make the sauce from it.

“You’ve got others who try to replicate it, but they do it with peri peri sauce. Nobody in Manchester does it.”

Trusted by takeaway lovers in Manchester, Three Brothers is now poised to be a breakout brand.

"I've had so many people messaging on Instagram wanting to franchise it, " Miz adds. "The thing is, I'm not comfortable with someone using my name.

"If the standards are not right they're always going to come back to this branch and say it's not consistent. I am considering, don't get me wrong.

"At a point I want to take a unit out where I can mass produce sauces and supply other branches with it."
